Chai Baked Oatmeal Cups

Chai Baked Oatmeal Cups blend warm spices like cinnamon, cardamom, and ginger with oats and maple syrup to create individual baked servings. These cups have a soft, moist texture, complemented by crunchy pecans both inside and on top, making them suitable for breakfast or a snack. The use of almond milk and avocado oil adds subtle richness without heaviness.

Description

Chai Baked Oatmeal Cups feature old fashioned oats combined with chai-inspired spices such as cinnamon, cardamom, ground ginger, allspice, and cloves. Flaxseed adds a touch of fiber and texture, while almond milk and avocado oil keep the batter moist and tender. The mixture is portioned into muffin tins and baked until set, resulting in warm, spiced cups with a tender, slightly chewy crumb.

The pecans folded into the batter and sprinkled on top provide a crunchy contrast that enhances the comforting spice blend. These cups make a convenient, hand-held breakfast option that can be prepared ahead and enjoyed throughout the week.

Ingredients

Servings
  • 2 cups old fashioned oats
  • 1 teaspoon cinnamon
  • ½ teaspoon salt sea salt
  • ½ teaspoon cardamom
  • ½ teaspoon ground ginger
  • ½ teaspoon allspice
  • teaspoon cloves
  • 1 teaspoon baking powder
  • 2 Tablespoons Flaxseed
  • 1 ½ cups almond milk unsweetened
  • 1 Tablespoon avocado oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • cup maple syrup
  • ¼ cup pecans plus more for topping, chopped

Instructions

  1. Preheat oven to 350°F and spray one 12-cup muffin tin with cooking spray or use cupcake liners. Silicone liners work great!
  2. In a large mixing bowl combine all ingredients together except for the pecans.
  3. Gently stir in pecans.
  4. Pour batter evenly into muffin tin.
  5. Bake 30-35 minutes or until the center of each baked oatmeal cup is set and a toothpick comes out clean. Allow cups to cool before eating (the cupcake liners are much easier to get off once they have cooled).
