Charred Corn Salad
Description
Charred Corn Salad begins with simmered corn cobs that are then lightly charred over an open flame for a smoky depth without burning. The kernels are cut off and mixed with diced red bell pepper, thin radish slices, chopped cilantro, and scallions. The dressing made from olive oil, lime juice (or white vinegar), cumin, grill seasoning, salt, and pepper is whisked together and folded into the salad to coat evenly.
The flavor profile offers the sweetness and slight char of the corn complemented by the fresh vegetables and bright, tangy dressing. The cumin and grill seasoning add a warm earthiness and subtle spice, while the lime juice brings acidity that lifts the salad. Texturally, the salad is crunchy and crisp.
This salad can be served immediately or refrigerated until needed, making it a flexible, fresh addition to meals where a smoky vegetable salad is desired. It pairs well with grilled meats or as a vegetarian side option.
Ingredients
- 3 ears sweet corn on the cob
- 1 red bell pepper diced
- 5 radish sliced thin
- 1/3 cup cilantro chopped
- 3 scallions sliced
for the dressing-
- 1/4 cup olive oil
- 2 tablespoons lime juice or white vinegar
- 1 teaspoon grill seasoning I used Mrs. Dash
- 1/2 teaspoon cumin ground
- salt to taste
- black pepper to taste
Instructions
- Place corn into a large pot of cold water. Cover and bring to boil. Reduce heat and simmer for 20 minutes. Drain corn.
- To char corn, place directly over the flame of a gas grill or onto a hot BBQ. Turn as it chars. You just want to get a little color on the corn and not completely burn it. Remove from heat and cut kernels off the cob and into a large bowl. Stir in red pepper, radishes, cilantro, and scallions.
- For the dressing, whisk all ingredients together and toss with corn mixture. Serve immediately or cover and refrigerate until ready to eat.
