Cheddar Corn Biscuits

Cheddar Corn Biscuits are perfectly buttery homemade biscuits with gooey melty cheddar cheese and sweet corn. Quick side for weeknight meals!

Ingredients

  • 4-1/4 cups flour
  • 2 tablespoons baking powder
  • 1 teaspoon ground mustard
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper coarse ground
  • 3/4 cup butter cubed, frozen
  • 14 3/4 ounces cream-style corn canned
  • 1 1/2 cups cheddar cheese diced, sharp
  • 2 large egg
  • 2 tablespoons heavy cream

Instructions

  1. Preheat the oven to 425 degrees.
  2. In a large food processor add the flour, baking powder, ground mustard, salt, and pepper, and pulse to combine.
  3. Add the butter and pulse until it resembles coarse crumbs, about 10 times.
  4. Move the mixture to a mixing bowl, add in corn, cheese, and eggs and stir to combine.
  5. On a large floured surface add the mixture.
  6. Flour the rolling pin well and gently roll the dough out 1" thick.
  7. Cut with 2 1/2 or 3 inch biscuit cutters.
  8. Place the biscuits on a baking sheet lined with parchment paper.
  9. Brush with heavy cream.
  10. Bake for 18-20 minutes or until light golden brown.
  11. Brush with additional melted butter and sprinkle with kosher salt if desired (but not necessary!).
