Cheese Saganaki (Pan-Seared Greek Cheese Appetizer)

Cheese saganaki is the famous Greek meze that consists of fried cheese that is set ablaze with Brandy tableside to the shout of Opa!

Ingredients

  • 1 lab saganaki cheese about ½ inch/1 cm thick, Greek
  • 1 tablespoon olive oil
  • ½ cup all-purpose flour (for dredging)
  • ½ hot glass brandy
  • 1 lemon

Required equipment

  • Saganaki pan

Instructions

  1. Pre-heat a heavy-bottomed skillet or a cast-iron pan to medium-high heat.
  2. Place the slab of cheese under running tap water, then dredge in all-purpose flour. Shake off any excess flour.
  3. Add olive oil to the skillet. When the oil is hot, add the cheese to the skillet and sear for a couple of minutes. Carefully flip the cheese with a spatula and sear for a couple more minutes on the other side.
  4. Turn off the heat source. Pour the brandy over the cheese and ignite with a lighter.
  5. Squeeze the lemon over the cheese. Serve immediately with crusty bread.
