Cheeseburger Puffs
Description
These Cheeseburger Puffs start by browning ground beef and onions, then simmering with barbecue sauce until thick. Separately, a batter is made blending flour, baking powder, milk, egg, and seasonings, into which shredded cheddar cheese and the cooled beef mixture are folded. The batter rests briefly before being spooned into a greased muffin tin.
Each muffin is topped with a piece of string cheese pressed into the center and covered with more batter to create a gooey cheese core. After baking at 375°F for about 20 minutes, the puffs develop a lightly browned, puffed exterior with a moist, flavorful interior rich in beef and cheese.
These puffs serve well as snacks or appetizers and can be garnished with pickles to mimic cheeseburger accompaniments.
Ingredients
- 1/2 lb ground beef lean
- 1/3 cup onion minced
- 1/3 cup barbecue sauce
- ¾ cup flour
- 1 teaspoon baking powder
- ¾ cup milk
- 1 egg lightly beaten
- 1 cup cheddar cheese shredded
- ½ teaspoon onion powder
- 1 teaspoon parsley dried
- 3 cheddar cheese strings
- pickles for garnish
Instructions
- Preheat the oven to 375 degrees. Grease a muffin pan very well.
- Brown onion and ground beef until no pink remains. Drain well.
- Add barbecue sauce and cook on low until sauce thickens. Cool completely.
- Combine flour, baking powder and spices in a bowl. Add in milk and egg and stir until combined.
- Stir in shredded cheese and beef. Allow mixture to stand for 10 minutes.
- Divide among 9 muffin wells. Cut each cheese string into 3 pieces and gently press 1 piece into the center of each muffin. Cover with batter.
- Bake 19-21 minutes until lightly browned and puffed.
