Cheesy Bean Burritos (Freezer Friendly)

Ingredients

  • 1 tablespoon olive oil
  • ½ cup finely diced onion
  • 1 green bell pepper diced
  • 1 clove garlic minced
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • 15 ounces canned black beans 1 can, drained and rinsed
  • 1 cup instant rice
  • 1 cup water
  • ¼ cup salsa
  • 2 cups shredded Monterey jack cheese
  • 8 flour tortillas 8-inch

Instructions

  1. Cook onion and bell pepper in olive oil until softened. Stir in garlic, chili powder, cumin and black beans. Cook 2 minutes more or until fragrant and heated through.
  2. Combine water, instant rice and salsa in a small saucepan. Bring to a boil. Cover and remove from heat. Let rest 5 minutes undisturbed.
  3. Divide cheese over the tortillas. Divide bean mixture and rice mixture over tortillas.
  4. Fold in the sides and roll burritos. Serve with salsa and sour cream if desired.

Notes

  • To make this with long grain rice, combine 2/3 cup white rice, 1 1/3 cups water and 1/4 cup salsa in a saucepan. Cover and simmer 15 minutes or until liquid is absorbed.
  • To bake burritos place in a 9x13 pan. Top with an additional 1/2 cup of cheese and bake at 350°F for 15-20 minutes or until cheese is melted.
  • To make frozen burritos, prepare as directed, wrap individually in plastic wrap or parchment and place in a labeled zippered bag
  • To reheat, thaw in the fridge and reheat in the microwave 1-2 minutes or until heated.
