Description
This recipe begins by browning lean ground beef with diced onion until fully cooked and then draining excess fat. Taco seasoning and diced tomatoes with chilies are added along with some water to develop a flavorful filling. The mixture is cooked until the liquid has mostly evaporated, concentrating the taste. Taco shells are arranged standing upright in a baking dish, sometimes stabilized with small balls of foil between shells.
The filling is divided among the shells, then layered with shredded cheddar cheese, both underneath and on top of the meat, which melts during baking. Ingredients
- 1 pound ground beef lean
- 1 ounce taco seasoning 1 packet, or 2 tablespoons homemade taco seasoning
- 1 onion diced
- 10 ounces canned diced tomatoes such as Rotel, with chilies
- 12 to 14 taco shells
- 2 ½ cups cheddar cheese divided, shredded, blend

Instructions
- Preheat oven to 400°F.
- Cook ground beef and onion until no pink remains. Drain fat. Add in taco seasoning, undrained tomatoes and ¼ cup water. Cook until no liquid remains (about 5 minutes).
- Place your taco shells in a 9×13 pan. Use small balls of foil between every second shell to help them stand up if needed.
- Divide 1 ½ cups of cheese between the shells. Top with meat mixture divided between shells and finally top with remaining cheese.
- Bake 15-18 minutes or until cheese melts. Top with desired toppings and serve immediately.
Notes
- Optional toppings include shredded cheddar, fresh tomatoes, lettuce, sour cream, and salsa added after baking.
- Use foil balls between shells to keep tacos upright during baking for even heating.
- Lean ground beef helps reduce grease and keeps the filling tender.
