Ingredients
- 2 pounds russet potatoes, cut into ½-inch to ¾-inch cubes (about 7 cups)
- 3 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 2 cups (226 g) sharp cheddar cheese, shredded

Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- To a large bowl, add cubed potatoes, olive oil, salt, and pepper. Toss the mixture until the potatoes are evenly coated. Spread the seasoned potatoes evenly onto the lined baking sheet.
- Bake for 25 minutes. After 25 minutes, flip the potatoes and continue to bake for an additional 25-30 minutes, or until the potatoes are golden brown and crispy.
- Sprinkle cheese evenly over the potatoes. Bake for an additional 5-10 minutes, or until the cheese is melted.
- Remove the potatoes from the oven and garnish with chopped parsley if you'd like.
- Serve immediately.
