Ingredients

  • 2 lbs chicken breast boneless, skinless
  • 10 ounces diced tomatoes with green chiles 1 can) drained, Rotel brand
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup cheddar cheese shredded

Garnish (optional)

  • cilantro freshly chopped
  • green onions freshly chopped

Instructions

  1. Preheat the oven to 400˚F.
  2. Mix together salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breast and lay flat in a large casserole dish.
  3. Drain the ROTEL and then spoon it over the chicken breasts to evenly cover them. Top with cheddar cheese.
  4. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes or until the chicken is cooked through (165˚F internal temp.)
  5. Top with your choice or freshly chopped cilantro or green onions and serve warm!
