Ingredients
For the Pudding:
- 4 cup almond milk your choice
- 3/4 cup chia seeds
- 1/2 cup honey or sweetener of choice
For the Berry Compote
- 1 cup frozen berries fresh works too
- 1 tsp fresh lime juice
- 1/4 cup sugar
- 1 tsp cornstarch
Instructions
For the Pudding:
- Mix all the ingredients, stir and allow to sit in the fridge overnight or for at least 3 hours
For the Berry Sauce (Compote)
- Add all the ingredients to a medium saucepan over medium heat and bring it to a boil
- Reduce heat and allow to simmer for 5 minutes (for fresh berries)
- Stir frequently. Once all the fruit has broken apart and the sauce has thicken, remove from heat Allow to sit for 10 minutes
- Mix the berry sauce with chia pudding or use sauce over ice cream, yogurt or even pancakes!
