Chicharrón de Pollo [Recipe + Video] Crispy Fried Chicken Bites

Chicharrón de Pollo features bite-sized pieces of chicken thigh meat with skin, coated in a seasoned flour mixture, then deep-fried until golden and crispy. The chicken pieces develop a flavorful crust seasoned with garlic powder, oregano, salt, and pepper, creating crunchy, juicy fried bites. A lime wedge garnish adds a brief acidity to brighten the fried richness. An air fryer option offers a less oily, slightly drier but still crispy alternative.

Description

This recipe for Chicharrón de Pollo uses chicken thighs de-boned and cut into small pieces retaining the skin. The pieces are coated with a flour mixture seasoned with salt, black pepper, garlic powder, and oregano, which crisps up during frying.

The chicken bites are deep-fried in vegetable oil heated to 350°F, cooking 3 to 4 minutes per side until golden brown and crisp. They are drained on paper towels to remove excess oil. Alternatively, cooking in an air fryer at 350°F for about 20 minutes yields a paler, slightly drier but still crispy result.

The finished crispy fried chicken bites are served with lime wedges that complement the savory fried crust with bright acidity. The seasoning blend and frying method produce a textured and flavorful snack or appetizer.

The recipe advises careful handling for safety and offers insights on frying temperature and batch size to maintain the oil heat and optimal crispiness.

Ingredients

Servings
  • 2 pound chicken thighs [0.91 kg]
  • ½ cup all-purpose flour
  • 3 teaspoon salt
  • 1 teaspoon black pepper freshly-cracked or ground
  • 1 teaspoon oregano dry, ground
  • 1 teaspoon garlic powder
  • 2 cups cooking oil vegetable oil, for frying
  • 2 lime cut into wedges

Instructions

1. Ready chicken

  1. Remove meat from bones. Cut chicken into small pieces that you could eat in one or two bites. Leave the skin on the chicken. You can use the leftover bones and parts to make broth. Set chicken pieces aside.

2. Coat chicken

  1. Combine flour, salt, pepper, oregano, and garlic powder. Mix well. Coat the each pieces of chicken with this mixture. Shake excess off.

3. Fried chicharrones de pollo

  1. Heat oil in a deep pan over medium heat (350 ºF [175 ºC). Deep fry the chicken until it turns golden brown (3-4 minutes on each side) --careful with hot oil splatters! Fry them three by three to avoid lowering the oil temperature too much.Place on a paper towel to drain excess oil.

4. Chicharrones de pollo in air fryer

  1. If you want to make them in the air fryer, instead of frying in oil, cook at 350 ºF [175 ºC] for 20 minutes, or until golden brown. They will be paler and a bit drier than fried, but still crispy and very tasty. The first time around they stuck to the bottom a bit, which was mostly solved by coating the bottom with a bit of sprayed oil.

5. Serve

  1. Garnish with lime wedges and serve with tostones.

Notes

  • Keep chicken skin on for crispier bites and use leftover bones for broth if desired.
  • Fry chicken pieces in small batches to maintain oil temperature and ensure even cooking.
  • Drain fried chicken on paper towels to remove excess oil before serving.
  • Air frying produces a less oily, slightly drier but still crispy alternative to deep frying.
  • Practice safe kitchen hygiene when handling raw chicken to prevent contamination.
  • Nutritional information applies to the deep-fried version.
