Ingredients
Chicken Fajitas:
- 1 lb (450g) skinless chicken breast cut into chunks
- 3 bell peppers deseeded and sliced
- 1 onion peeled and sliced
- 2 tsp olive oil
- 1 tbsp fajita seasoning (see notes to make your own fajita seasoning mix)
- salt
Salad:
- 4 cups salad greens or lettuce of your choice (I love using multi-colored leaves as makes the salad pretty)
- 2 avocadoes sliced
Salad dressing:
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1-2 tbsp honey
- 1 tbsp chopped green onions
- 1 tbsp chopped fresh cilantro (coriander)
- chopped chili peppers to taste (optional)

Instructions
Make Chicken Fajitas In The Air Fryer
- Preheat Air Fryer to 350F / 180C.
- Mix all the ingredients for the Chicken Fajitas in a bowl and make sure everything is fully coated.
- Add the mix into the Air Fryer basket and cook for 14-18 minutes turning halfway through.
- Serve air fryer chicken fajitas as a salad (low carb) or as fajitas with toppings of your choice.
How To Make Sheet Pan Chicken Fajitas
- Preheat Air Fryer to 400F / 200C / gas 6.
- Mix all the ingredients for the Chicken Fajitas in a bowl and make sure everything is fully coated.
- Add the mix to a rimmed baking tray and cook for 18-24 minutes turning halfway through.
- Serve air fryer chicken fajitas as a salad (low carb) or as fajitas with toppings of your choice.
Chicken Fajita Salad Dressing
- Mix together lime juice, olive oil, honey, chopped green onions, chopped fresh cilantro, chopped chili peppers, to taste (optional) and salt until combined.
- Adjust seasoning to suit your taste.
Make The Fajita Chicken Salad
- Assemble the salad, starting with the lettuce, then adding the chicken fajitas and sliced avocado.
- Then drizzle on as much salad dressing as you want, serve and enjoy!
Notes
- One serving of this Chicken Fajita Salad contains 2 Blue Plan SmartPoints.
- Feel free to add more lime or more chili to suit your taste.
- The chicken is ready and safe to eat when a meat thermometer reads 165 degrees F.
- Try and make sure the chicken pieces are all the same size so they cook at the same rate.
- Cook time depends on the size of chicken pieces and veggies, so if you cut them small you might want to cook for a couple of mins less than this recipe states.
- If I am short on time or spices, I just use a mix of paprika and cumin to make this.
- Feel free to double or triple the Fajita Chicken Salad recipe to serve a crowd.
