Ingredients
- 500 g chicken thighs Cut into 1-inch cubes
- 2 Red Onions Cut into chunks
- 2 red bell peppers Cut into chunks
- 2 yellow bell peppers Cut into chunks
- 2 courgettes Sliced into rounds
- 2 tbsp olive oil
- 2 tsp cumin powder
- 2 tsp coriander powder
- 1 tsp paprika
- 1 tsp dried oregano
- salt To taste
- black pepper To taste
- Wooden skewers Soaked in water for 30 minutes
Marinade
- 3 cloves garlic Minced
- 1 tbsp lemon juice
- 2 tbsp Greek yogurt
- 2 tbsp olive oil
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp paprika
- salt To taste
- black pepper To taste
Instructions
- In a bowl, combine all the marinade ingredients.
- Place the chicken cubes in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken, red onions, red and yellow bell peppers, and courgettes onto the soaked wooden skewers, alternating the ingredients.
- Drizzle the skewers with 2 tablespoons of olive oil and sprinkle with ground cumin, ground coriander, paprika, dried oregano, salt, and pepper.
- Grill the chicken kebabs for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Serve the chicken kebabs hot with your choice of side dishes.
Notes
- If you are using wooden skewers, soak them in water, this helps prevent them from burning on the grill.
- You can serve these chicken kebabs with pitta bread, rice, or a fresh salad.
