Chicken Meatball Rice Bowls

Batch cooking meatballs helps this well-balanced dinner come together quickly. Heap on as much kimchi as you like for this Korean-inspired dish.

Ingredients
- 2 small cucumbers
- 1 large carrot
- pinch fine sea salt
- 1 teaspoon sesame oil
- 1 lime
- 3 cups cooked rice
- 6 Glazed Ginger Chicken Meatballs
- 1/2 cup green onions sliced
- 1/2 cup kimchi
- 2 Tablespoons black sesame seeds or toasted sesame seeds
Instructions
- Thinly slice cucumbers. Use a vegetable peeler to shave the carrot into ribbons.Toss both vegetables with salt and sesame oil in a small bowl. Squeeze half a lime over the top.
- Heap rice and meatballs into a shallow bowl. Reheat to desired temperature (I use a microwave).
- Sprinkle meatballs with green onions. Build your power bowl by adding a side of kimchi, prepared vegetables and any other add-ins you choose.
- Finish the dish with a generous squeeze of lime and a sprinkling of sesame seeds. Serve warm.
