Chicken Satay

Description

The marinade combines dry roasted peanuts, light brown sugar, soy sauce, lemongrass, garlic, makrut lime leaves (or zest and juice), ginger, turmeric, curry powder, black pepper, and vegetable oil, blended into a smooth paste that coats the chicken thoroughly. After marinating for at least 4 hours or overnight, the chicken is threaded onto bamboo skewers and grilled on medium-high heat with oil until cooked through and lightly charred.

The accompanying peanut sauce is prepared by blending reserved marinade with additional peanuts, oil, soy sauce, lime zest and juice, Thai chiles, garlic, and green onion until smooth, adjusted for thickness as needed. This sauce adds a creamy, spicy finish to the grilled chicken skewers, which are topped with crushed peanuts and cilantro leaves for texture and brightness.

  • 1 1/2 pounds chicken thighs boneless, skinless, cut into 1-inch pieces, about 6 pieces

satay marinade

  • 1/2 cup peanuts dry roasted
  • cup light brown sugar
  • 6 tablespoons soy sauce
  • ¼ lemongrass stalk, chopped, about 3 inch piece
  • 3 garlic cloves, chopped
  • 2 makrut lime leaves OR 1 lime, zested and juiced, chopped
  • 1 tablespoon ginger minced
  • 1 tablespoon Turmeric
  • ¼ teaspoon curry powder
  • ¼ teaspoon black pepper
  • 3 tablespoons vegetable oil divided

spicy peanut sauce

  • cup reserved marinade
  • ¼ cup peanuts dry roasted
  • 3 tablespoons vegetable oil
  • 1 ½ tablespoons soy sauce
  • 1 lime zested and juiced
  • 1 to 3 Thai chiles depending on desired heat, seeded
  • 1 garlic clove, chopped
  • 1 green onion thinly sliced

Instructions

  1. Place all marinade ingredients into a blender, except 1 1/2 tablespoons oil, and blend until smooth.
  2. Reserve ⅓ cup of marinade for peanut sauce. Pour remaining marinade over chicken.
  3. Toss together until all chicken pieces are completely covered. Allow mixture to marinate for at least 4 hours (ideally overnight).
  4. Skewer 5 to 6 cubes of chicken onto each bamboo skewer, until all chicken has been used.
  5. Place a grill pan over medium-high heat (or use an outdoor grill on medium heat setting). Pour oil into pan and grill skewers for 4 minutes, on each side. Repeat until all skewers have been grilled.
  6. Top chicken satay skewers with crushed peanuts and cilantro leaves.

spicy peanut sauce

  1. Place all ingredients for peanut sauce into a blender and blend until smooth. (If sauce is too thick, blend some water into the sauce, ½ tablespoon at a time, until desired consistency has been achieved).
  2. Pour mixture into a small bowl or ramekin, top with crushed peanuts (optional) and serve as dipping sauce for satay.

Notes

  • This recipe yields about 15 skewers; a serving size is 3 skewers with one-third of the peanut sauce.
  • Grilling or using a grill pan is preferred to achieve a charred flavor; if unavailable, use a cast iron skillet or broil carefully.
  • If baking in an oven, cook at 400°F for 15 to 20 minutes, monitoring to avoid drying out.
  • Adjust peanut sauce consistency by blending in small amounts of water if too thick.
