Ingredients

  • 1/2 cup olive oil
  • 3 tablespoons soy sauce
  • 1 teaspoon lemon zest
  • 1 1/2 tablespoons brown sugar
  • 2 teaspoons parsley chopped, fresh
  • 2 cloves garlic minced
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • 1 tablespoon honey
  • 1 tablespoon thyme chopped, fresh leaves
  • 1 teaspoon lemon juice
  • 2 pounds chicken thighs

Instructions

  1. Whisk all marinade ingredients in a bowl until well combined.
  2. Place the marinade in a glass container with a tight lid, or a ziplock bag. Add chicken thighs, and marinate for 12 hours. Remove chicken from marinade and drain. Discard marinade.
  3. Fry, grill, or bake chicken thighs using your favorite method.
