Chicken With Peas, Sage And Bacon

Oven-baked chicken thighs with crisp skin are paired with a creamy sauce of sautéed shallots, garlic, and bacon, simmered with white wine, peas, heavy cream, and fresh sage. The combination delivers tender meat served on a rich, herb-flecked sauce accented by the smoky bacon and the bright sweetness of peas. This recipe highlights layered flavors and textures, complemented by the slow cooking and sauce reduction.

Description

Chicken With Peas, Sage And Bacon involves baking skin-on, bone-in chicken thighs seasoned and lightly oiled until cooked through with crispy skin. Meanwhile, a sauce is formed by sautéing shallots, bacon, and smashed garlic until the bacon crisps. White wine is added and reduced by half to concentrate flavors, followed by heavy cream and frozen peas for sweetness and creaminess. Fresh sage is stirred in last to infuse herbal notes.

The finished chicken is served over the sauce, combining the richness of cream with smoky bacon and fresh green peas. The cooking method balances roasting with stovetop simmering, ensuring the chicken stays juicy and the sauce thickens and flavors deepen. The dish presents a comforting plate with appealing savory and slightly sweet elements.

Serving immediately preserves the texture contrasts between crispy chicken skin and creamy sauce. The wine reduction and sage provide distinctive aromatic dimensions, making this dish suitable for a dinner main course.
