Chickpea Pumpkin Fritters Recipe

Chickpea Pumpkin Fritters blend canned chickpeas, pumpkin puree, kale, and spices into soft patties coated with panko and pan-fried until golden and crisp. Served with a lemon-infused mayonnaise, these fritters balance earthy, savory, and slightly smoky flavors with a crispy exterior and tender interior.

Description

The Chickpea Pumpkin Fritters Recipe combines rinsed chickpeas, minced kale, canned pumpkin puree, toasted sesame seeds, almond flour, sea salt, smoked paprika, minced garlic, and an egg. These ingredients are processed until mostly smooth then shaped into patties coated in panko breadcrumbs. The fritters are cooked in olive oil over medium-high heat, frying about 3-4 minutes per side until golden and crisp on the outside while remaining soft inside.

The mixture’s flavors include the earthiness from pumpkin and kale, nuttiness from sesame seeds and almond flour, smoky paprika, and garlic notes. The panko crust adds a crisp texture contrasting with the tender fritter body. The accompanying lemon mayo, made by mixing mayonnaise with lemon zest and juice, provides a bright, tangy dip that complements the mild fritters.

This recipe yields a flavorful snack or appetizer that can also serve as a vegetarian main dish. Its blend of vegetables, legumes, and seasonings offers both texture and balanced flavors.

Ingredients

Servings
  • 14 ounce chickpeas drained and rinsed, canned
  • 1 cup kale minced
  • ½ cup pumpkin puree canned
  • cup sesame seeds toasted
  • 2 tablespoons almond flour
  • 2 teaspoons salt sea salt
  • 1 teaspoon smoked paprika
  • 2 large garlic minced, cloves
  • 1 large egg
  • 1 ¼ cups panko gluten-free, if needed
  • ¼ cup olive oil

Lemon Mayo

  • ¼ cup mayonnaise
  • lemon zest from 1
  • 1 tablespoon lemon juice

Instructions

  1. Start by making the mayonnaise. In a small bowl, mix together the mayo, lemon zest, and lemon juice.
  2. Add the chickpeas, kale, pumpkin puree, sesame seeds, almond flour, salt, paprika, garlic, and egg to your food processor and blend on high until mostly smooth.
  3. Place the panko into a shallow bowl. Use a ¼ cup measuring cup to scoop the fritters and place them (one at a time) into the panko. Coat them well on all sides and form them into the shape of patties. They will be quite soft.
  4. Heat the olive oil in a large frying pan over medium-high heat. Add the pumpkin fritters and pan fry until golden, about 3-4 minutes per side, working in batches if needed. Lower the heat if the fritters are browning too quickly.
  5. Serve the crispy pumpkin fritters with the lemon mayo for dipping.
