Ingredients
For the Fries:
- 2 medium sweet potatoes sliced lengthwise in both directions to form fries
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- salt and pepper to taste
For the Mayo:
- 1/2 cup mayonaise
- 1 tablespoon lemon juice
- 1 clove garlic minced
- salt and pepper to taste
Instructions
- Prepare a baking sheet by lining with parchment paper, and preheat oven to 425 degrees F.
- Mix all ingredients for fries in a bowl; stir, using a spoon or your hands, to coat the sweet potatoes evenly.
- Spread evenly on baking sheet so the fries do not touch; bake for 35-40 minutes (or until browned and crispy), turning once or twice.
- Meanwhile, mix all ingredients for lemon garlic mayo in a small bowl, and refrigerate until needed.
- Serve sweet potato fries with the lemon garlic mayo.
