Sweet Potato Fries
- 3 large sweet potatoes
- ¼ cup olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- 1 teaspoon rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
Paprika Garlic Aioli
- 1 cup homemade mayonnaise
- 1 ½ teaspoon smoked paprika
- 2 teaspoon minced garlic
- ½ teaspoon garlic powder
- A pinch of salt and black pepper
- 1 Tablespoon lime juice

Instructions
Sweet Potato Fries
- Preheat oven to 400 F. Line two large baking sheets with parchment paper.
- Wash and peel the potatoes. Cut the sweet potatoes in 1/4-inch long slices and then in 1/4-inch wide strips. Place them in a large bowl and toss them with about 1/4 cup olive oil to coat. Sprinkle with paprika, garlic powder, rosemary, salt, and pepper, and toss to coat.
- Arrange the sweet potato fries in a single layer in both baking sheets and don't overcrowd.
- Bake in a preheated 400 F oven for 30 minutes, turning halfway through.
- Let the sweet potato fries rest for about 10 minutes before serving them. This will help them crisp up a little bit more.
Paprika Garlic Aioli
- Mix all ingredients in a small bowl. Serve with baked sweet potato fries.
Notes
- Cut evenly-sized sweet potato fries. This helps them cook evenly.
- Coat them in starch (either cornstarch, tapioca, potato starch or arrowroot starch). This will help crisp the fries as they bake.
- Use parchment paper. Using parchment paper will prevent the fries from sticking to the sheet and will help them crisp up nicely.
- Don't overcrowd the baking sheets. Make sure the potato fries are in a single layer and not overcrowded. Allowing air between the fries will help them roast better.
