Ingredients
- ¼ cup carrot grated
- ¼ cup zucchini grated
- ¼ cup spinach approx. 1 handful, chopped, fresh
- 3 TBSP green onion extra to garnish, chopped
- 8 oz sour cream
- 7-8 oz Greek yogurt plain, 2% fat
- ¼ cup mayonnaise
- 1 tsp garlic powder
- ½ tsp salt sea salt
- ¼ tsp black pepper
- ¼ tsp dill fresh works too!, dried
- 1 bread fresh round loaf from bakery; see notes for preparation
DELISH DIPPERS:
- bread or crostini; chopped
- carrot
- broccoli
- cauliflower
- cucumber slices
- celery sticks
- bell pepper sliced
- Pita chips
- and anything your heart desires!
Instructions
- Chop your veggies and squeeze the zucchini dry with a few paper towels to remove excess liquid.
- Combine all ingredients and mix well.
- Pop it in the refrigerator overnight and serve the next day with all your favorite dippers. Dip will stay fresh and delicious for up to 4 days in the fridge.
- Serve it in a bread bowl (see above for instructions), in hollowed out bell peppers, or your favorite bowl. Enjoy!
Notes
- Allow the dip to chill overnight for best flavor development between the herbs, vegetables, and seasonings.
- If Greek yogurt is not available, substitute with extra sour cream and mayonnaise to maintain creamy texture.
