A delicious and flavorful salad that is packed with leafy romaine, red cabbage, chicken, carrots, and almonds. The pasta adds a unique and perfect texture and the sesame dressing is perfect on top!

Ingredients
- 2 cups cooked and sliced chicken
- 3 cups chopped romaine lettuce
- 6 ounces cooked rotini pasta, about 2 cups
- 1 cup shredded red cabbage
- ½ cup sliced red onion
- ½ cup shredded carrots
- ¼ cup roasted almonds
- ⅓ cup Chow Mein noodles
- salt and pepper to taste
Sesame Dressing
- 2 tablespoons vegetable oil
- 6 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon sesame seeds
- ½ teaspoon fresh ground pepper
- ⅛ teaspoon salt

Instructions
- In a large bowl combine 3 cups chopped romaine lettuce, 2 cups cooked and sliced chicken, 6 ounces cooked rotini pasta, 1 cup shredded red cabbage,½ cup sliced red onion, ½ cup shredded carrots, ¼ cup roasted almonds, and ⅓ cup chow mein noodles. Toss and season with salt and pepper.
Dressing
- In a medium bowl, whisk together 2 tablespoons vegetable oil, 6 tablespoons rice vinegar, 1 teaspoon sesame oil, 1 tablespoon honey, 1 teaspoon Dijon mustard, 1 tablespoon soy sauce, 1 tablespoon sesame seeds, ⅛ teaspoon salt and ½ teaspoon fresh ground pepper.
- Pour the dressing over the salad and toss to combine. Alternatively, you can pour the dressing over individual servings.
