Chinese Five Spice
Description
The Chinese Five Spice blend combines whole spices including star anise, fennel seeds, Szechuan peppercorns, cinnamon stick, and cloves, which are toasted in a dry skillet until fragrant to enhance their aromatic oils without burning. Once cooled, the spices are ground finely using a coffee grinder, spice grinder, blender, or mortar and pestle to create a uniform powder. The blend captures a balanced flavor profile that is simultaneously sweet, warm, and peppery with a hint of citrusy numbing sensation from the Szechuan peppercorns. This versatile spice mix is commonly used in Chinese cooking to season meats, soups, stir-fries, and marinades. Storing the ground blend in an airtight container preserves freshness and flavor. Toasting the spices carefully is key to avoid bitterness, requiring attention and moderate heat during the process.
Ingredients
- 10 star anise (or 2 tablespoons ground star anise)
- 2 1/2 teaspoons fennel seeds or 1 1/2 tablespoons ground fennel seed, whole
- 2 teaspoons Szechuan peppercorns (or 2 teaspoons ground szechuan peppercorn)
- 1 cinnamon stick or 1 teaspoon ground cinnamon, small
- 6 clove or 1/4 teaspoon ground cloves, whole
Instructions
- Toast the whole spices in a dry skillet over medium-high heat until very fragrant. Be careful not to scorch the spices or they will become bitter. Remove from heat and let cool completely. Grind the spices in a coffee/spice grinder, blender or with a mortar and pestle. Store in an airtight container until ready to use.
