Chinese Takeout Wings

Chinese Takeout Wings are chicken wings marinated in a blend of soy sauce, Shaoxing wine, garlic powder, sugar, black pepper, and egg, then coated with flour and cornstarch. Fried until golden and crispy, these wings offer a balanced savory, slightly sweet flavor with a crisp texture. The frying temperature and multiple coatings ensure a crunchy exterior while keeping the inside juicy. They're a practical option for making flavorful wings reminiscent of a classic takeout dish at home.

Description

Chinese Takeout Wings feature whole chicken wings marinated in soy sauce, Shaoxing wine, garlic powder, sugar, black pepper, and an egg mixture to infuse flavor and tenderize. After marinating, the wings are dusted with a combination of flour and cornstarch which creates a light, crispy crust when fried. The wings are fried at 375°F in batches until golden brown, resulting in a crunchy outside and juicy inside. Salt is added after frying to enhance the savory notes. This recipe requires a careful frying technique that produces a texture similar to restaurant-style wings.

The wings can be served as an appetizer or snack and pair well with dipping sauces or as part of a larger meal. Their bold soy and sesame oil flavor and crispy texture make them a satisfying choice for someone looking for homemade wings with Asian-inspired seasoning.

The wings need to be brought to room temperature before frying for even cooking. The recipe suggests mixing the cornstarch coating just before frying to maintain crispiness. Frying in small batches avoids temperature drops in the oil, preserving the wings' crispness and color.
