Chipotle Cilantro Lime Rice
Description
This recipe uses cooked basmati rice fluffed with fork after cooking to maintain separate grains. Lime juice and coconut oil, which can be substituted with butter, are stirred in to add moisture and a rich, slightly sweet note. Freshly chopped cilantro and chili lime seasoning are folded through to bring herbal freshness and gentle spice with a citrus kick.
The finished rice can be garnished optionally with lime wedges and sliced jalapeños for additional brightness and heat. It serves well alongside grilled or roasted proteins, used as a base for taco bowls, or as a flavorful accompaniment to various Latin-inspired meals.
Stored in the refrigerator, this rice keeps well up to five days, making it convenient for meal prep. The recipe’s flexibility to swap coconut oil with butter helps cater to different pantry stocks or taste preferences.
