Description
Chipotle Corn Salsa brings together corn kernels, either fresh or frozen, cooked until tender, and combined with red onion, jalapeño, and cilantro. The lime juice and olive oil add a fresh acidity and smooth mouthfeel, balancing the slight heat of jalapeño with herbaceous notes. The preparation involves simple chopping and mixing, followed by chilling to harmonize flavors. This salsa achieves a mix of crunch and softness with a mild spicy kick.
The salsa complements tortilla chips for dipping but also shines as a fresh topping on tacos, grilled meats, or rice bowls. Its combination of crunchy corn and fresh herbs injects brightness into many dishes without overpowering them, offering a fresh flavor contrast.
If you prefer a milder salsa, the jalapeño can be replaced with sweet red bell pepper. The salsa keeps well chilled and often tastes even better after a day as flavors develop.
Ingredients
- 12 oz corn kernels (frozen or fresh)
- ½ cup onion red, finely chopped
- ¼ cup jalapeno pepper finely chopped
- ½ cup cilantro chopped, fresh
- 2 TBSP green onion optional, chopped
- 1 lime juiced
- 1 TBSP olive oil or avocado oil
- ¼ tsp salt plus extra to taste
Instructions
- Cook corn via your favorite method! You'll want to snag a 12 ounce bag or grab two large ears of corn and remove the kernels with a knife. Steam/microwave if using frozen or sauté fresh kernels in a skillet until tender. Easy peasy!
- Allow corn to cool and combine with onion, jalapeño, cilantro, and green onion. Add lime juice and a tablespoon of your favorite healthy oil (we love using avocado oil here!) then season with salt.
- Toss it all together and chill until ready to eat! It's great right away and even fantastic the following day!
- Serve with tortilla chips for dipping or on top of all your favorite Mexican and Tex-Mex dishes. It's great on everything!
Notes
- Substitute sweet red bell pepper for jalapeño to reduce spice.
- Fresh or frozen corn can be used; cook fresh corn kernels by sautéing until tender or steam/microwave frozen corn.
- Chilling salsa before serving enhances the melding of flavors.
