Ingredients

  • 12 oz corn kernels (frozen or fresh)
  • ½ cup onion red, finely chopped
  • ¼ cup jalapeno pepper finely chopped
  • ½ cup cilantro chopped, fresh
  • 2 TBSP green onion optional, chopped
  • 1 lime juiced
  • 1 TBSP olive oil or avocado oil
  • ¼ tsp salt plus extra to taste

Instructions

  1. Cook corn via your favorite method! You'll want to snag a 12 ounce bag or grab two large ears of corn and remove the kernels with a knife. Steam/microwave if using frozen or sauté fresh kernels in a skillet until tender. Easy peasy!
  2. Allow corn to cool and combine with onion, jalapeño, cilantro, and green onion. Add lime juice and a tablespoon of your favorite healthy oil (we love using avocado oil here!) then season with salt.
  3. Toss it all together and chill until ready to eat! It's great right away and even fantastic the following day!
  4. Serve with tortilla chips for dipping or on top of all your favorite Mexican and Tex-Mex dishes. It's great on everything!

Notes

  • Substitute sweet red bell pepper for jalapeño to reduce spice.
  • Fresh or frozen corn can be used; cook fresh corn kernels by sautéing until tender or steam/microwave frozen corn.
  • Chilling salsa before serving enhances the melding of flavors.
