Description
This Chipotle Hummus recipe starts with a food processor blending chickpeas and chipotle peppers with a bit of olive oil. The mixture is refined to a smooth consistency by gradually adding olive oil and tahini paste. The reserved chickpea liquid, or alternatively water, is used to thin the hummus for a creamy texture without diluting flavor.
The smoky heat from the chipotle peppers introduces a distinctive depth contrasted against the smooth, nutty tahini and creamy chickpeas. Lemon juice and salt add brightness and balance, while white pepper brings subtle warmth. The topping of toasted pine nuts provides a contrasting crunch and richness, complemented by an optional olive oil drizzle for extra silkiness.

Ingredients
- 28 ounces chickpeas , drained, reserve liquid
- 1/2 cup extra virgin olive oil
- 4 tablespoons chickpea liquid reserved
- 2 tablespoons tahini paste
- 4 tablespoons chipotle peppers in adobo sauce , divided and chopped
- 1/2 teaspoon lemon juice
- 2 teaspoons salt fine sea salt
- 1/2 teaspoon white pepper
- 1 tablespoon pine nuts , toasted
- olive oil optional, drizzle
Instructions
- In a food processor, combine 1 tablespoon chipotle peppers with chickpeas and a small amount of olive oil. Blend until smooth.
- Slowly add additional olive oil and tahini, then thin out with reserved chickpea liquid. You can also use water, it just doesn't have as much flavor. Season with the salt and white pepper according to personal preference.
- Top with additional chopped chipotle peppers, toasted pine nuts and additional extra virgin olive oil (if desired).
