Ingredients
- 1 cup of flour
- ½ cup whole wheat flour
- 1 tsp baking soda
- ¼ tsp salt
- 3 mashed overripe bananas
- ⅓ cup coconut oil melted
- ½ cup white sugar
- ¼ cup brown sugar packed
- 1 large egg room temperature
- 1 tsp vanilla extract
- ¾ cup + 1-2 tbsp milk chocolate chips divided
Instructions
- Preheat oven to 350 degrees. Coat a small loaf pan with cooking spray.
- Whisk together the flours, baking soda, and salt together in a small bowl.
- In a large mixing bowl, whisk together the mashed bananas, coconut oil, both sugars, egg, and vanilla extract until well combined.
- Add dry ingredients to wet then stir until just combined. Fold in 3/4 cups of the chocolate chips. Pour the batter into the prepared loaf pan. Sprinkle the remaining chocolate chips evenly over the top of the loaf.
- Bake for 50-60 minutes, or until a tester inserted into the center of the bread comes out clean. Remove from the oven and let sit in the pan for 10 minutes before turning out onto a wire rack to cool completely. Slice and serve with butter if desired. Enjoy.
