Chocolate Chip Overnight Oats

Chocolate Chip Overnight Oats combine rolled oats soaked overnight in almond milk and Greek yogurt with maple syrup, chia seeds, vanilla, and chocolate chips. The mixture softens into a creamy, spoonable texture with bits of chocolate throughout, making it a convenient, ready-to-eat breakfast or snack. A drizzle of peanut butter adds richness and a slight savory contrast.

Description

Chocolate Chip Overnight Oats use rolled oats soaked overnight with unsweetened vanilla almond milk and plain Greek yogurt. Sweetened with maple syrup and flavored with vanilla and a pinch of sea salt, the oats absorb the liquid and soften without cooking. Chia seeds add a slight thickness and nutritional boost. Half the chocolate chips are stirred in ahead of time, melding subtly into the mixture, while the rest top the oats just before eating, providing melty bursts of chocolate.

The texture is creamy yet hearty, with a gentle sweetness balanced by the peanut butter drizzle that adds a nutty, savory richness. This preparation suits refrigerated storage up to five days for convenient, grab-and-go meals.

Adding mashed banana is one suggested variation to enhance sweetness and fruit flavor. The oats achieve a cold, refreshing consistency that contrasts well with the richness of the peanut butter and chocolate chips.

Ingredients

Servings
  • 1 cup rolled oats not instant, old fashioned
  • 1 cup almond milk unsweetened vanilla
  • 1/2 cup yogurt plain, Greek
  • 2 teaspoons maple syrup
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla
  • pinch of sea salt
  • 2 Tablespoons chocolate chips I use Lily's dark chocolate chips, divided
  • 1/2 Tablespoon peanut butter for drizzling, drippy

Instructions

  1. Add oats, almond milk, yogurt, maple syrup, chia seeds, vanilla, sea salt and 1 Tablespoon of chocolate chips into a bowl. Stir well to combine. Divide oat mixture into two containers (I like using mason jars), seal with a lid and place in the fridge overnight.
  2. Take one container out of the fridge the next morning and stir the mixture.
  3. Top with chocolate chips, drizzle peanut butter on top and enjoy!
  4. Overnight oats will keep for up to 5 days in the fridge in a sealed container.

Notes

  • If desired, add mashed banana for extra natural sweetness and flavor.
  • Store in sealed containers in the fridge for up to five days.
