Chocolate Peanut Butter Pie

Pie Crust

  • 1 1/2 cups Graham cracker crumbs
  • 4 tablespoons butter melted

Pie Filling

  • 1 cup heavy cream
  • 8 ounces cream cheese at room temperature
  • 1 1/4 cups natural peanut butter
  • 3/4 cup packed dark brown sugar
  • 2 teaspoons vanilla extract

Pie Topping

  • 6 ounces semi-sweet chocolate
  • 1/2 cup heavy cream

Instructions

Pie Crust

  1. Preheat the oven to 350°F.
  2. In a bowl, mix the graham cracker crumbs and melted butter.
  3. Press the graham cracker mixture into the bottom and up the sides of a pie plate or tart pan.
  4. Bake for about 5 to 10 minutes. Remove from oven and allow to cool to room temperature.

Pie Filling

  1. In a large bowl, whip 1 cup heavy cream until it forms stiff peaks.
  2. With a stand mixer and in another clean bowl, cream together the cream cheese, peanut butter, brown sugar, and vanilla. Beat until the mixture is smooth and creamy.
  3. Gently fold the whipped cream into the peanut butter mixture.
  4. Spoon the peanut butter mixture into the graham cracker crumb pie shell.
  5. Place the pan into the refrigerator to chill for about 1 hour or until the pie sets.

Pie Topping

  1. In a small saucepan, heat 1/2 cup heavy cream until it just begins to boil.
  2. Add the chopped chocolate to the pan and stir until the chocolate melts completely.
  3. Spread the melted chocolate over the peanut butter pie.
  4. Chill the pie until the chocolate sets. This pie must be kept in the refrigerator.

Notes

  • Top with whipped cream and chopped peanuts
  • Drizzle with melted peanut butter
  • Serve with coffee or cold milk
  • Pair with vanilla ice cream for an extra indulgent dessert
