  • 3 tablespoons vegetable oil (peanut, corn or soy, see notes)
  • 1 pound pork chops diced, boneless
  • 1 carrot diced, large
  • 1 celery sliced, stalk
  • 1 red bell pepper or green bell pepper, diced
  • 1 red onion diced, large
  • 8 cups rice made with our recipe (see notes, white, cooked; arroz blanco per our recipe
  • ¼ cup green peas optional, blanched; petit pois; may be canned
  • ¼ cup green beans or canned (optional, blanched
  • ¼ cup soy sauce or to taste
  • ¼ cup chives or scallions, if you don't have chive, diced finely

Instructions

1. Cook vegetables

  1. Heat the oil over medium-high heat in a wok (or large skillet or a big pot, if you don't have a wok). Add the pork chops and cook and stir till they brown. Add the carrots and cook and stir for 30 seconds. Add the celery and cook and stir for another 30 seconds. Add bell pepper and onion and sauté and stir for 30 seconds.

2. Cook rice

  1. Add the cooked rice, and the peas and green beans, (if you use them) and mix well until there are no clumps of rice left. Drizzle with soy sauce to taste and mix well.

3. Serve

  1. Remove from the heat and serve. Garnish with the chives.

  • Use 8 cups of cooked white rice for this recipe, ensuring it is prepared ahead and separated for even frying.
  • Choose vegetable oils with a high smoke point like peanut, corn, or soy oil; avoid olive oil for stir-frying at high heat.
