Ingredients
- 1½ pound pork chops 0.7 kg] cubed and bones removed, smoked
- 2 tablespoon vegetable oil (I used olive oil)
- 1 red onion 140 g], cut into strips, medium
- 1 bell pepper [110 g], cut into strips
- 4 tomato diced, large
- ¼ teaspoon black pepper or to taste, freshly-cracked or ground
- ½ teaspoon salt or to taste
- 1 prig parsley finely chopped (optional
Instructions
1. Brown pork chops
- Heat the oil over medium heat in a cast iron skillet or heavy-bottomed pan. Add the pork chop cubes, and cook and stir until they brown.
2. Cook the vegetables
- Add the onion and cook and stir until the onions become translucent. Add the bell pepper, and cook and stir for a minute. Add the tomatoes and lower the heat. Simmer until the tomatoes soften. Stir in the parsley. Season with salt and pepper to taste.
3. Serve
- Remove from the heat and serve. Serving suggestions above the recipe.
