Chuletas Guisadas (Puerto Rican Stewed Pork Chops)

Chuletas Guisadas is a Puerto Rican dish featuring thinly cut pork chops stewed in a rich tomato-based sauce with sofrito, olives, and spices. The pork is first seared, then simmered with tomato sauce, chicken broth, and aromatics until tender. Bell peppers and onions are added near the end for a tender, flavorful finish. The sauce is vibrant with sazón and adobo seasonings, enhanced by the olives and herbs, making it well-suited to serve over white rice.

Description

Chuletas Guisadas (Puerto Rican Stewed Pork Chops) combines thin, bone-in pork chops seared and then simmered in a sauce built from sofrito, tomato sauce, chicken broth, and distinctive seasonings like sazón and adobo. The cooking process involves reducing the sauce to deepen flavors before the pork chops are returned to gently stew until tender. Green olives, oregano, and bay leaf lend complexity, while sliced onions and bell peppers added later provide softness and sweetness. The dish showcases a balance between savory pork and bright, layered sauce components.

The pork chops emerge tender, infused with the flavorful tomato and herb broth. The sofrito and garlic create a fragrant base, while the chicken broth and vinegar add moisture and slight acidity. The olives add a touch of briny contrast, with the bell pepper and onion softening to complement the meat’s texture. Simmering times are guided by the thickness of the pork chops, ensuring a well-cooked interior.

This stew is traditionally served hot over white rice, which absorbs the rich sauce. It works well as a hearty lunch or dinner option. The combination of seasonings and olives provides a distinct Puerto Rican flavor profile, making it a practical choice when seeking a robust, comforting pork dish.

Homemade adobo and sazón can be used if commercial packets are unavailable, preserving authenticity. The recipe notes specify amounts and substitutions, ensuring flexibility without losing character. The inclusion of fresh cilantro at the end adds a green freshness to balance the flavors. Adjust seasoning at the end to taste for a personalized finish.

Ingredients

Servings
  • 3 Tbsp olive oil $0.12, divided
  • 2 lbs pork chop $9.98, thinly cut, bone-in
  • 2 tsp adobo seasoning $0.08
  • 6 Tbsp sofrito $1.08
  • 1 Tbsp garlic $0.14, minced
  • 8 oz tomato sauce $0.59
  • 1 Tbsp white distilled vinegar $0.04
  • 1 1/2 tsp Sazon seasoning $0.17, 1 packet
  • 2 cups chicken broth $0.24
  • 1/4 cup green olive $0.33, pimento-stuffed, sliced
  • 2 tsp oregano $0.20
  • 1 bay leaf $0.10
  • 1 onion $0.42, sliced in 1/4 inch half moons
  • 1 bell pepper $1.59, sliced into 1/4-inch strips
  • 1/4 cup cilantro $0.27, fresh leaves

Instructions

  1. Add 2 tablespoons of oil to a large saute pan and set it over medium-high heat. Mix adobo with the remaining 1 tablespoon of oil and rub the pork chops with the mixture. Sear pork chops in batches. Sear on both sides, about 2 minutes on each side.
  2. Remove the pork chops from the pan, and set aside. Add the sofrito and garlic and saute until fragrant, about 2 minutes.
  3. Add the tomato sauce, vinegar, and sazón and saute until the mixture thickens, about 4 minutes.
  4. Add chicken broth, olives, oregano, and bay leaf, and stir well. Bring the sauce to a boil and reduce by one-quarter.
  5. Add the pork chops back to the pan, cover, and lower the heat to medium-low. Cook until pork chops are tender, about 7 minutes for each 1/2 inch of thickness.
  6. Add onion and bell pepper, cover, and cook until softened, about 5 minutes.
  7. Take the pan off the heat and stir in cilantro leaves. Taste the sauce and add salt and pepper if necessary. Serve over white rice and enjoy your new favorite weeknight dish!

Notes

  • If you cannot find adobo seasoning, prepare your own blend with salt, garlic powder, oregano, onion powder, black pepper, cumin, and turmeric, storing extras airtight.
  • To substitute sazón seasoning, combine specific proportions of garlic powder, cumin, coriander, annatto, turmeric, and oregano as noted for an authentic flavor.
  • Pimento-stuffed green olives (Manzanilla olives) are recommended for their distinct flavor and texture in this dish.
