Classic Cobb Salad Dressing Recipe
Description
The Classic Cobb Salad Dressing uses a blend of acidic ingredients including red wine vinegar and fresh lemon juice, combined with garlic, Worcestershire sauce, sugar, Dijon mustard, and water to create a flavorful base. Olive oil and salad oil are slowly emulsified into the mixture, resulting in a harmonious dressing with balanced tartness and savory depth.
Prepared in a blender or whisked by hand, this dressing suits green salads and dishes needing a bright, zesty complement. It can be refrigerated for several days, allowing flavors to meld further.
Making ahead is suggested for convenience; just whisk before serving to re-emulsify if separated.
Ingredients
- 1/3 cup red wine vinegar
- lemon juice of ½ lemon
- 1 garlic clove
- 2 teaspoons Worcestershire sauce
- 1 ½ tablespoons Dijon mustard
- 1 teaspoon sugar
- ¼ cup water
- 1/3 cup olive oil
- 2/3 cup salad oil
- salt to taste
- black pepper to taste
Instructions
- Add all of the ingredients to a blender and pulse at high speed until the dressing is combined and emulsified.
- Serve or store in the refrigerator.
Notes
- This dressing can be made 3-4 days ahead and stored in the refrigerator.
- Before serving, bring to room temperature and whisk to re-emulsify and blend flavors.
- If you lack a blender, gradually whisk in the oils to achieve emulsification manually.
- Keep covered in the refrigerator for up to 7 days.
