This Classic French Remoulade combines quality mayonnaise with finely minced cornichons, capers, and a traditional herb blend including tarragon, parsley, chives, and sometimes chervil. Dijon mustard and white wine vinegar add a sharp acidic note, while anchovy essence or finely chopped anchovy fillet lends subtle umami, enhancing the overall depth.
The preparation is straightforward: all ingredients are stirred together until combined, then chilled for at least a few hours to allow the flavors to fully integrate. This resting time ensures the sauce develops its characteristic bright and smooth consistency suitable for pairing with fried seafood, boiled shellfish, or cold cuts.
The recipe yields a little over one cup of remoulade, which can be stored covered in the refrigerator for up to two weeks, making it a convenient sauce for entertaining or everyday meals.
Ingredients
- 1 cup mayonnaise quality
- 2 tablespoons cornichons finely minced
- 2 tablespoons mixed herbs tarragon is traditional and highly recommended; additionally you can include parsley, chives, and chervil, finely chopped
- 1 tablespoon capers very finely minced
- 1 tablespoon Dijon mustard we recommend Maille, real French
- 1 tablespoon white wine vinegar
- anchovy essence or one small very finely chopped anchovy fillet (optional, a few drops
- salt to taste
- black pepper to taste
Instructions
- Place the mayonnaise in a bowl along with the remaining ingredients. Stir until the ingredients are fully combined. Cover and chill for at least a few hours before using. For the best flavor, let the sauce chill in the fridge for 24 hours before using to allow time for the flavors to fully meld. Store in the fridge in an airtight container. Will keep up to 2 weeks.Makes a little over 1 cup.
