Cloud Bread
Description
Cloud Bread uses just three main ingredients: eggs, cream of tartar, and cream cheese or Greek yogurt. The egg whites are whipped with cream of tartar to create stiff peaks that provide lift and a light texture. Meanwhile, the yolks are mixed with the creamy component to add moisture and richness.
By folding the whipped egg whites gently into the yolk mixture, the batter maintains airiness which produces bread with a soft, airy crumb once baked at a low temperature. Baking at 300°F gently cooks the bread rounds until they are lightly browned and firm to the touch.
The resulting cloud bread rounds can be served as a low-carb sandwich base or as a soft bread substitute in various dishes. They are best cooled completely and can be refrigerated in a sealed container to maintain freshness for several days.
Ingredients
- 3 large egg divided
- ⅛ teaspoon cream of tartar
