Cobb Salad (with Homemade Dressing)

Our famous Cobb salad is loaded with three different kinds of protein, colorful veggies, and a tangy red wine vinaigrette. Meal prep is about to get an epic upgrade!

Ingredients

  • 10 oz lettuce chopped, romaine or iceberg
  • 1 lb Cooked Chicken Breast sliced
  • 1 cup Bacon cooked and chopped
  • 2 large hardboiled eggs sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup blue cheese crumbled

Cobb Salad Dressing

  • 1 tbsp red wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 garlic clove pressed
  • 1/4 tsp salt adjust to preference
  • 1/4 tsp ground black pepper adjust to preference

Instructions

  1. Add the chopped lettuce to a large bowl.
  2. On top of the lettuce, arrange the chicken, bacon, eggs, cherry tomatoes, and blue cheese. Set aside.
  3. In a small jar, whisk together the red wine vinegar, olive oil, Dijon mustard, garlic, salt, and pepper until combined.
  4. Pour the dressing over the salad and toss until combined. Serve and enjoy!
