Coconut Cream Yogurt

Usually yogurt has a serving size of 1/2 cup, but you will get just over 1/2 cup per serving with this. Per serving, it'll be 314.75 Calories, 32.17g Fats, 4.08g Net Carbs and 1.16g Protein.

Ingredients

  • 1 can full fat coconut milk
  • 2 capsules NOW Probiotic-10
  • ½ teaspoon NOW Xanthan Gum 1/4 tsp. split between both jars
  • cup heavy whipping cream
  • toppings of your choice

Instructions

  1. Stir a can of coconut milk well and empty contents into 1 or 2 containers.
  2. Open probiotic capsules and add the contents to each container (or 2 capsules to 1 container).
  3. Place container(s) in the oven with the oven light on for 12-24 hours. The longer it is in there, the thicker it gets. DO NOT open the oven door.
  4. Once finished, place in refrigerator to cool or pour straight into a mixing bowl.
  5. Add 1/2 tsp. xanthan gum to the yogurt and use a hand blender to mix well. It should thicken up after doing this.
  6. In a separate bowl, whip heavy cream until very stiff peaks form. The consistency should be close to solid.
  7. Add heavy cream to yogurt and mix on low speed until consistency desired is achieved.
