Coconut Panna Cotta With Mango Gelee
Description
This dessert begins by gently heating coconut milk, heavy cream, and sugar together to dissolve the sugar without boiling. Gelatin is softened separately in cool water, then incorporated into the warm coconut mixture until fully dissolved. The mixture is poured into individual containers and chilled to set. For the mango gelee, mango puree is cooked with sugar, then gelatin soaked in water is whisked in once off heat. This mixture is poured over the set panna cotta layer and chilled until firm. Toasted sweetened coconut flakes add a final garnish.
The panna cotta’s silky texture contrasts with the slightly firmer mango gelee, creating a layered dessert with tropical flavors ideal for warm weather or a light finish to a meal. The gelatin allows the dessert to hold its shape well while maintaining a creamy mouthfeel.
Ingredients
For Coconut Panna Cotta
- 1 1/2 Cups coconut milk one can
- 1/2 Cup heavy cream
- 1/4 Cup sugar
- 1/4 Cup water cool
- 1/4 oz gelatin 1 envelope, unflavored
For Mango Gelee
- 1/2 Cup mango puree frozen or fresh
- 2 Teaspoons sugar
- 2 Tablespoons water cool
- 1/4 oz gelatin 1 envelope, unflavored
Garnish
- sweetened coconut flakes
Instructions
- For Coconut Panna Cotta
- Place the coconut milk, heavy cream, and sugar in a saucepan over medium heat. Stir until sugar dissolves. Mixture doesn't need to boil
- Place cool water in a bowl, sprinkle the gelatin on top and mix with a spoon
- Remove coconut milk mix from the heat and add the bloomed gelatin
- Whisk with a spoon or until gelatin is completely dissolved
- Pour mixture into individual containers
- Refrigerate the containers for a minimum of 4 hours
- For Mango Gelee
- Place mango puree and sugar in a saucepan over medium heat. Heat until mixture boils
- Pour water in a bowl. Sprinkle gelatin over the water and mix with a small spoon
- Remove mango puree from heat
- Add the gelatin mixture and whisk vigorously until the gelatin dissolves
- Pour the mango gelee on top of the cooled and set panna cottas
- Refrigerate for 2 hours or until set
- Top with coconut flakes
- Enjoy!
