Coconut Rice
Description
Coconut Rice uses jasmine rice rinsed until the water runs clear to remove excess starch, then cooked in a combination of coconut milk and coconut water. This cooking liquid imparts a gentle coconut fragrance and creaminess to the rice. Salt is added to balance flavors. The rice is brought to a boil, then simmered on low with the lid on until the liquid is absorbed and the grains are tender, typically around 17 to 20 minutes.
After cooking, the rice rests covered for 15 minutes to allow moisture redistribution, resulting in a fluffy texture when fluffed with a fork. This method yields tender rice with subtle coconut undertones and a pleasant aroma, suitable as a side for many meals.
The finished coconut rice can be served plain or enhanced with toppings such as toasted unsweetened coconut, sliced almonds, black beans, fresh mango, pineapple, bell pepper, cilantro, or a squeeze of lime for added flavor and texture. This flexibility makes it appropriate for a variety of dishes or cuisines.
Ingredients
- 2 cups (14 oz) jasmine rice
- 1 (13.5 oz) can coconut milk
- 1 1/2 cups (355ml) coconut water or water
- salt
Instructions
- Place jasmine rice in a fine mesh sieve and rinse under cold water until water runs clean. Drain well, it works best to tap base of sieve with your hand or against the sink.
- Heat coconut milk and coconut water in a medium non-stick saucepan set over medium-high heat. Bring to a boil, season with salt (add to taste, I use about 1/2 - 3/4 tsp) add rice and bring to a simmer.
- Reduce heat to low, cover and simmer until water has been absorbed (you may find there's a few small pools of liquid at the top and that's fine), about 17 - 20 minutes.
- Remove from heat let rest covered 15 minutes. Uncover, fluff with a fork and serve warm.

- Serve plain or mix in toasted coconut, cilantro, nuts, fruits, or lime to add texture and flavor.
