Coffee Cookies Eggless – A super yummy and easy coffee cookies recipe made with coffee, cocoa and butter. It is so good with a cup of tea and guaranteed to satisfy all the coffee lovers!!

Ingredients
Coffee mixture
- 1 tablespoon coffee
- 1 tablepoon hot water
Cookies dough
- ¾ cup salted butter
- ¾ cup powdered sugar
- 1 cup all-purpose flour
- ¼ cup cocoa powder
- ¼ teaspoon baking powder
- 1 tablespoon vanilla essence
Instructions
Coffee mixture
- Add hot water to the coffee to make a coffee mixture.
- Stir well and set it aside.
Cookie dough
- Beat melted butter at a low speed for a minute.
- Add powdered sugar and beat until creamy.
- Stir in the coffee mixture and combine well.
- To this mixture, add flour, cocoa powder, baking powder and vanilla essence and mix well with the help of a spatula.
- Make a dough and cover it with a cling foil. Refrigerate for an hour.
- After refrigeration, make equal sized cookie balls and place them on a lined baking sheet.
- Bake at 160°F for only 10-12 minutes.
- Let the cookies rest on the baking try for 10 -12 minutes after baking.
