Cookie Dough Overnight Oats
Description
This recipe builds a cookie dough-like base by mixing natural creamy peanut butter with coconut sugar and a small amount of vanilla Greek yogurt. Mini chocolate chips folded into the mixture add bursts of chocolate flavor, mimicking cookie dough bits. This base is pressed into serving cups as the bottom layer.
Vanilla Greek yogurt is spread over the cookie dough layer, then a mixture of rolled oats soaked overnight in milk and cinnamon is layered on top. The oats absorb the liquid slowly, resulting in a soft texture by morning. Additional chocolate chips sprinkled before serving add extra chocolate flavor and texture.
The overnight soaking means no cooking is required, making this a convenient breakfast that’s also satisfying and comfortingly familiar thanks to the cookie dough flavor profile. The recipe serves two and can be adjusted or doubled as needed.
Ingredients
- 2 tablespoons peanut butter natural creamy
- 1 1/2 tablespoons coconut sugar
- 1/2 cup + 1 tablespoon vanilla Greek yogurt divided
- 1/2 tablespoon mini chocolate chips plus additional, for serving
- 1 cup rolled oats old-fashioned
- 1/2 teaspoon cinnamon
- 1 cup milk
Instructions
- In a medium bowl, beat together the peanut butter and coconut sugar using an electric hand mixer until well combined.
- Add 1 tablespoon of Greek yogurt to the mixture and beat until well combined and the mixture starts to come together like dough. Stir in the chocolate chips.
- Divide the cookie dough between two cups, pressing down into the bottom. Spread 1/4 cup of Greek yogurt on top of each cookie dough layer.
- In a medium bowl stir together the oats and cinnamon. Pour in the milk and stir until the oats are evenly soaked. Divide the oats between the two cups and place into the refrigerator overnight.
- In the morning, sprinkle with additional chocolate chips, if desired, and enjoy.
Notes
- Because the peanut butter and sugar amounts are small, scrape dough from bowl sides to ensure even mixing and achieve a cookie dough-like texture.
