Copycat Taco Bell Cheesy Fiesta Potatoes Recipe

Ingredients

  • 2 large russet potatoes
  • ¼ cup vegetable oil
  • 1 1 ounce packet of taco seasoning 2 Tablespoons jarred seasoning
  • ½ cup sour cream
  • 1 cup Nacho Cheese Rico's is supposed to be the most similar Taco Bells
  • 2 scallions chopped

Instructions

  1. Rinse potatoes and dry them.
  2. If baking in the oven, preheat it to 425 degrees F.
  3. Cut them into 1-inch bite-size pieces.
  4. In a large mixing bowl, toss the cubes with the oil making sure they are all coated. Then sprinkle on the taco seasoning. Toss well until everything is coated.

Air Fryer Instructions

  1. Place the potato cubes into your air fryer basket and air fry at 400 degrees F for 10 minutes.
  2. After 10 minutes, shake the basket or stir them to toss them around.
  3. Continue cooking at 400 F for another 5-10 minutes until the potato chunks are fork-tender and crispy.

Oven Instructions

  1. Put the cubes on a baking sheet. Cook in a preheated 425 degree F oven for 30-40 minutes.
  2. Stir them halfway through the cooking time.
  3. They are done when they are golden brown and crispy.

Serving

  1. Divide potatoes into 4 small bowls or ramekins.
  2. Warm up the nacho cheese in the microwave for 30 seconds or until warmed through.
  3. Evenly drizzle the potatoes with nacho cheese sauce. Add the sour cream on top of the nacho cheese.
  4. Garnish with chopped green onion.
