  • 1 (8.5 oz) Jiffy corn muffin mix (original or vegetarian)
  • 1/2 cup (4 oz) butter unsalted
  • 1 cup (8 oz) sour cream
  • 2 large egg
  • 1 (15 oz) can corn well drained, whole kernel
  • 1 (15 oz) can cream style corn

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 by 9-inch or 11 by 7-inch baking dish with non-stick cooking spray.
  2. Melt butter in a large microwave safe mixing bowl in microwave until melted, let cool slightly.
  3. Mix in sour cream and eggs.
  4. Add corn kernels and cream corned and mix.
  5. Pour in Jiffy muffin mix (break up any large clumps) and fold mixture until combined.
  6. Pour into prepared baking dish and bake until set, about 40 - 50 minutes. It should come out free of batter when toothpick is inserted into center and it should no longer jiggle.

  • You can substitute the Jiffy mix with a homemade blend of flour, cornmeal, sugar, salt, and baking soda following the same directions.
