Corn Salsa

Corn Salsa combines fresh corn kernels, chopped tomatoes, red onion, cilantro, and garlic with lime juice and seasoning for a bright, textured salsa. The lime juice ties the flavors together while the fresh vegetables provide a crisp, juicy bite. This salsa offers a refreshing, tangy accompaniment suitable for Tex-Mex dishes or grilled meats.

Description

Corn Salsa is made by mixing fresh or canned (drained) corn kernels with chopped vine-ripened or cherry tomatoes, red onion, cilantro, and minced garlic. Lime juice brightens the salsa, and kosher salt with black pepper seasons the mixture. Allowing the salsa to rest for several hours or overnight in the refrigerator helps the flavors meld and intensify.

The combination yields a fresh, tangy salsa with varied texture from the corn’s slight crunch and the softness of the tomatoes. The lime adds essential acidity, balancing the sweetness of the corn and freshness of the herbs. Its quick assembly and chilling make it easy to prepare ahead.

This salsa pairs well with Tex-Mex dishes such as burrito bowls or grilled chicken, adding a zesty topping. It can be served chilled straight from the fridge and stored in an airtight container to maintain freshness. Using fresh ingredients like cherry tomatoes and corn enhances flavor depth.
