Cotija Corn Avocado TRISCUIT Crackers -- CotijaCornOcadoScuits -- are the perfect summertime appetizer! Corn is boiled in its husk, then grilled for a lovely char. An avocado is sliced. Cotija cheese is crumbled. TRISCUIT Original Crackers are topped with an avocado slice, the corn kernels and the cotija before being devoured. This savory, slightly salty appetizer makes a tasty vegetarian starter for any crowd this season!

Ingredients
- 1 ear corn in its husk
- 1 large avocado
- ¼ cup cotija cheese crumbled
- 1 box TRISCUIT Original Crackers
Instructions
Cook the Corn
- Place a large saucepan filled with water on the stovetop over high heat.
- With the lid on the saucepan, bring the water to a boil. When boiling, add the corn.
- Boil for 5 minutes, then remove from the water.
- Let the corn cool down, then peel. (Boiling the corn in its husk makes peeling it a LOT easier, and you'll notice the silk doesn't stick nearly as much.)
- Fire up the grill or heat a grill pan over medium-high heat.
- Brush the corn with butter, and place on the grill/grill pan, rotating constantly, until the kernels begin to char.
- Remove from the heat, and let cool until you can handle it without gloves.
- Using a knife on a flat surface (or a bundt pan), cut the kernels from the ear of corn. Set aside.
Make the Cotija Corn Avocado TRISCUITs
- Set the TRISCUIT Original Crackers onto a serving platter.
- Cut the avocado, and place small slices of it onto the TRISCUIT Original Crackers.
- Place the charred corn kernels on top of the avocado. (This is the most challenging part, in my opinion. Take your time and try to get as many kernels onto the avocado as possible.)
- Sprinkle the Cotija cheese on top of the appetizer.
- Serve at room temperature, and enjoy!
