- 2 cups cottage cheese 16 oz/ 450 g, Note 2
- 1 can pineapple 10 oz/ 280 g, chopped, Note 3
- 2 tablespoons honey + more to taste, Note 4

Instructions
- Prepare the pineapple: Drain well. If the chunks are too large, cut them into bite-sized pieces. If using fresh fruit, peel and chop it.1 can pineapple
- Optional: Whip the cheese in a food processor or blender until smooth, light, and fluffy. Use a spatula to scrape down the sides of the bowl once or twice to ensure everything blends evenly. It takes 1-2 minutes.Alternatively, leave the cottage cheese as it is; it’s a matter of personal preference.2 cups cottage cheese / 450 g/ 16 oz
- Combine cottage cheese with honey to taste. Start with 1-2 tablespoons and add more as desired.2 tablespoons honey
- Assemble: Place some pineapple chunks at the bottom of the serving bowls or jars. Scoop the sweetened cheese into small serving bowls or jars. Arrange the remaining pineapple on top. Sprinkle it with cinnamon and drizzle a little more honey over the top if desired.a dash of cinnamon
Notes
- You can whip the cottage cheese in or leave it as it is.
- Cottage cheese: Full-fat or low-fat are both ok.
- Pineapple: Canned pineapple, preferably unsweetened. If you use fresh pineapple, you should consume the mixture immediately. When you mix pineapple with dairy, a substance called bromelain breaks down the main protein in milk: casein. This process turns casein into smaller pieces, known as peptides, which can sometimes taste slightly bitter.
- Sweetener: You can replace honey with maple syrup, brown sugar, or another sweetener of choice.
