Cowboy Butter
Description
The Cowboy Butter recipe mixes finely minced garlic with chopped fresh herbs including parsley and lemon thyme, and incorporates Dijon mustard and fresh lemon zest and juice for tang. Smoked paprika adds a smoky note while cayenne pepper and red pepper flakes contribute heat. Salt balances the flavors. Melted unsalted butter is whisked into the mixture, creating a smooth, emulsified compound butter that can be poured or spread easily.
The butter melds savory, herbal, citrus, and spicy elements, enhancing a variety of grilled or roasted dishes with a rich and piquant topping. Its creamy texture allows it to melt quickly over hot proteins or vegetables, imparting both moisture and flavor.
This butter is meant to be used immediately but can be stored for up to two weeks in an airtight jar in the refrigerator. Adjusting the amount of cayenne and red pepper flakes controls spiciness, making it suitable for different heat preferences.
Ingredients
- ½ cup butter melted, unsalted
- 3 cloves garlic finely minced
- 3 tablespoons parsley chopped
- 2 teaspoons lemon thyme or fresh thyme, fresh, chopped
- 1 tablespoon Dijon mustard
- 1 lemon zest and juice

- ½ teaspoon cayenne pepper
- ½ teaspoon red pepper flakes
- ½ teaspoon salt
Instructions
- Add all the ingredients, except for the butter, into a mixing bowl.
