Cowboy Butter
Report
Creamy cowboy butter is packed with herbs, pepper, garlic, and lemon. Melt this zesty butter on steaks, bread, and everything in between!

Ingredients
- ½ cup butter softened
- 1 lemon
- 1 tablespoon fresh parsley chopped
- 1 tablespoon fresh chives chopped
- 2 teaspoons fresh thyme minced
- 1 tablespoon Dijon mustard
- 3 cloves garlic minced
- ½ teaspoon smoked paprika
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon ground cayenne
- ⅛ teaspoon red pepper flakes

Instructions
- Bowl Method: In a medium bowl, add the softened butter, lemon zest and 1 teaspoon juice, dijon mustard, herbs and spices. Mix together until combined.
- Processor Method: No need to chop herbs. Zest the lemon and add that and 1 teaspoon lemon juice to a processor. Add the herbs, mustard and garlic and blitz until chopped and blended. Next add the spices and softened butter and puree until blended.
- Using a spatula, scoop the cowboy butter onto a piece of plastic wrap. Shape the butter into a log, and start to roll plastic wrap up and over log, pressing and shaping as you go until the butter is completely wrapped in plastic. Twist the ends of the plastic wrap together and refrigerate until firm, 2 hours up to overnight (See Note 1).
- When ready to use, remove from plastic wrap (if used) and slice into coins to top grilled steak. Otherwise you could leave soft and spread on top of grilled meats, potatoes and bread. It can also be melted and used as a dipping sauce if preferred.
Notes
- For a more uniform roll I use a paper towel roll and slide the wrapped soft butter in and then leave that package in the refrigerator to harden and then slice to top a grilled steak.
