Cowboy Caviar Recipe

Cowboy Caviar is a colorful bean salad combining black beans, white beans, red kidney beans, sweet corn, diced tomatoes, and chopped red onion and jalapeño. Tossed with a cumin and smoked paprika spiced dressing made from avocado oil, white balsamic vinegar, garlic, and honey, it offers a fresh, zesty flavor with mild heat. Chopped cilantro adds brightness, making this dish a versatile dip or side served with tortilla chips.

Description

The Cowboy Caviar recipe combines three types of beans—black, white, and red kidney beans—with sweet corn and fresh vegetables like diced tomatoes, red onion, and jalapeño for texture and flavor contrast. The dressing blends avocado oil and white balsamic vinegar with honey, garlic, cumin, and smoked paprika, creating a balanced mix of tang, sweetness, and mild smoky heat. Black pepper and salt season the salad to taste.

The salad is assembled by rinsing and draining the canned ingredients, then tossing them together with the fresh vegetables. The dressing is whisked separately and poured over the bean mixture, ensuring all ingredients are coated. Letting the salad sit enhances the melding of flavors. The textures range from creamy beans to crisp onion and juicy tomatoes, complemented by the fresh herbaceous note of cilantro.

Serve Cowboy Caviar chilled as a dip with tortilla chips or as a side to grilled meats or tacos. It holds well refrigerated and is an easy make-ahead dish. The fresh and vibrant ingredients create a light but satisfying addition to a variety of meals or snack times.
